Instead of only having white, can we have the ability to set the blinder to the group colour palette, or have it set to a custom colour?

Thanks for this feedback we'll keep it in mind.
In the meantime, if you aren't already using your effect button you might be able to achieve what you'd like using snapshots and fx palettes: create a snapshot(s) where color channels are overwritten to the static color you'd like, and then create an fx palette where the condition is "effect". It will then set your lights to that specific color when you press the effect button. It's a bit involved but is an ok work around for now.
